watermelon
7 c sugar
2 c vinegar
1/4 tsp oil of cloves
1/2 tsp oil of cinnamon

Directions:
Directions:
remove green skin and pink flesh from watermelon rind. cut into 1 in cubes. parblanch it, (put in cold water and bring to boil). simmer 3 minutes until can pierce with fork, do not overcook. drain. boil all other ingredients to boil to make syrup. pour syrup over rind. cover and let stand overnight. remove rind, reboil syrup and pout over rind again. let stand overnight. on 3rd morning pack rind in sterile jars, boil syrup again and pour over to full. seal and process jars 15 mins in boiling water bath..
