2 Lg. Tomatoes- peeled & cubed
1 Green Pepper
1 Red Pepper
1/4 lb. ham
1 onion
Spicy Pepperoni
3/4 C. cooked rice seasoned with the following:
1 tsp. sugar
2 tsp chili powder
1 tsp cayenne pepper
1 1/2 C. water
2 chicken boullion cubes
Shrimp

2 Lg. Tomatoes- peeled & cubed
1 Green Pepper
1 Red Pepper
1/4 lb. ham
1 onion

Sautee together until onions are soft. Add:
Spicy Pepperoni

Bake in a 350˚ oven stirring occasionally for about 15-20 minutes. Then add

3/4 C. cooked rice seasoned with the following:
1 tsp. sugar
2 tsp chili powder
1 tsp cayenne pepper

In a separate container, microwave 1 1/2 C. water and dissolve in 2 chicken boullion cubes

Then add this mixture to the rice/veggie/ham mixture.
Bake 20-30 minutes, stirring occasionally.

Place Shrimp on top of mixture and cook an additional 5 minutes. Enjoy

Freezes and reheats really well. Always better the next day. Recipe easily multiplies - great for parties.
