Ingredients: 1 3/4 c. scalded milk 2 pkg. yeast 1/4 c. lukewarm water 2 tsp. salt 1/2 c. honey 2 eggs shy 1/2 c. canola oil 3 c. whole wheat flour 3 1/2 c. bread flour

Directions: |
Directions:Scald milk and cool to lukewarm. Add yeast to the water; let stand 5 minutes. Stir in the milk, salt, honey and eggs with a wire whisk. Combine flours; gradually add 4 c. of flour to the yeast mixture whisking well after each cup added. Beat in the oil. Gradually add the other 2 c. flour and work in with a wooden spoon. Knead the dough on a floured surface until elastic, using last 1/2 c. flour if needed to keep from sticking. Place dough in oiled bowl and let raise till doubled. Punch down dough and shape into rolls. Makes 4 doz. Bake at 375º for 12-13 mins. until browned. Can bake at 250º for 20 mins. Remove from oven; cool. Refrigerate for 8 days or place in freezer for up to 2 months. |
