3 lbs. ground beef
2 cups bread crumbs
1 cup Ritz crackers, crumbled
1 cup finely chopped onion
1 green bell pepper, finely chopped
1/2 cup carrot, grated
1/2 cup whipping cream
3 eggs, beaten
2 tbsp. BBQ sauce
1 tbsp. steak seasoning
2 tsp. Dijon mustard

TOPPING:
1 cup ketchup
1/4 cup BBQ sauce
1 tbsp. balsamic vinegar
2 tbsp. chopped onion
2 tbsp. chopped bell pepper

Meat Loaf Directions: Combine all ingredients in a large mixing bowl, place sheet of parchment paper on a cookie sheet and form meat loaf mixture into a loaf that is even - about 3 to 4 inches thick. Bake at 400º for about one hour or until internal temp reaches 165º. Cover with topping and bake an additional 10-15 minutes.

Topping Directions: Combine all ingredients in a sauce pan and simmer until veggies are tender.
