3/4 cup shortening
1 cup sugar
2 eggs
1 tsp. vanilla extract
2 1/4 cups all-purpose flour
1 1/2 tsp. cream of tartar
3/4 tsp. baking soda
1/4 tsp. salt
1/4 cup pecans or walnuts, finely chopped
2 tbsp. sugar
1 tsp. ground cinnamon

Preheat oven to 375. In a large bowl with a mixer at medium speed, beat shortening, 1 cup sugar, eggs and vanilla until well mixed, occasionally scraping the bowl. Stir in flour, cream of tartar, baking soda and salt until well mixed. In a small bowl, combine nuts, 2 tbsp. sugar and cinnamon. With hands, shape dough into one-inch balls. Roll each in nut mixture to coat. Place cookies two inches apart on cookie sheet. Bake 8-10 minutes until cookies are flattened and lightly browned. Immediately remove cookies to wire racks; cool.
