Sweet & Sour Meatballs Recipe

5 tsp. beef bouillon, divided
1/4 cup water
1 1/2 lbs. ground beef
1 cup soft bread crumbs
3/4 cup finely chopped onion
1 egg
1 (20 oz) can pineapple chunks, drained, reserving syrup
1/3 cup lemon juice
1 tbsp. brown sugar
2 tbsp. soy sauce
1 tsp ginger
2 tbsp. cornstarch
1 large green pepper, cut up

Hot Rice

Dissolve 2 tsp. beef bouillon in water. Combine beef, bread crumbs, onion, bouillon liquid and egg, mix well. Shape into 18 meatballs. Brown the meatballs, drain off fat.
In a 2 cup measuring cup, combine 1/4 cup pineapple juice, lemon juice, sugar, soy sauce, remaining bouillon and ginger. Add to meatballs. Cover and simmer for 20-25 minutes. Combine the rest of the pineapple juice and cornstarch and add to the meatballs, with pineapple and green peppers.
