7 pounds cucumbers, peel and remove soft centers, then cut in chunks
2 gallons water
2 cups lime powder
2 quarts white vinegar
4 1/2 lbs sugar (9 cups)
1 TBSP sack salt (canning salt)
1 TBSP whole mustard seeds
1 tsp whole cloves
1 tsp celery seed
1 tsp mixed pickling spices
Green food coloring if desired (Mema did this--they were almost neon!)

Pour water and lime over chunked cucumbers and let stand 24 hours. Take pickles out and rinse well in cold water (at least through 3 waters) and let stand 3 hours. Add pickles to the rest of the remaining ingredients. Let stand overnight. Next morning, put on stove and simmer 35 minutes. Pack hot in jars and seal.
