Pumpkin Bread Recipe

3 C Sugar
1 C Oil
4 Eggs
1/2 tsp Salt
1 tsp Cinnamon
1 tsp nutmeg
2 tsp. soda
3 1/3 C Flour
2 C Pumpkin
2/3 C Water
1 C chopped nuts, optional

Preheat oven to 350.

Combine sugar and oil and beat well. Add eggs, one at a time, beating well after each egg.

In a separate bowl, combine salt, cinnamon, nutmeg, soda and flour.

In a separate bowl, combine pumpkin and water. Stir together

Blend dry ingredients and pumpkin mix alternately with egg mix and beat well after each. Add nuts.

Bake for one hour.

Makes 12-17 small loaf pans or 3 large loaves. These freeze well.
