Chicken Salad Recipe

1 large Onion, sliced
4 ribs Celery with leaves, sliced
4 whole Chicken Breasts
3-4 ribs Celery, chopped
1/2 c White or Red Grapes
1/4 c Pecans, chopped
1 medium Onion, chopped
3/4 c Mayo
1 tbsp. Lemon Juice

Place onion, celery, salt and pepper in large kettle, bring to a boil, and add chicken breasts, simmer 1 hour or until chicken is tender. Remove breasts and chill.
Skin and bone chicken and cut into cubes. Add celery, grapes, onions and nuts. Add only enough mayo and lemon juice to mix thoroughly, but not to soggy.
