3 lb "great northern beans" (soak overnight)
1 lb brown sugar
1 TSR dry mustard
1 TSR pepper
1 small onion, diced
1-1/2 lb salt pork

Directions:
Directions:
boil soaked beans for 15 min. drain and rinse
put into large roaster. set aside
in saucepan stir to dissolve brown sugar, mustard, pepper, and onion. fill pan with cold water
pour over beans in roaster
slice salt pork and lay on top of beans
bake, covered, at 300º for 6 hours. Add water if needed
remove lid and bake one more hour.
Do not add water during last hour.
