1/2 c. cocoa
1/2 c. water
1 c. sugar
1/2 c. shortening
1 c. milk
1 t. vanilla
2 eggs
2 c. cake flour
1 t. soda
1 t. salt

Directions:
Mix cocoa and water; set aside. Add soda, salt and sugar to flour; set aside. Stir shortening to soften. Add dry ingredients and 2/3 c. milk; beat 1 minute. Add eggs and the rest of the milk and beat. Add vanilla and cocoa mixture. Beat. Pour into 2 greased layer pans or 9"x13" pan. Bake at 350*

This is the cake that my mother made for everyones birthday. It was always done in round layers with a cream filling and gooey chocolate frosting. You will find the filling and frosting recipes in this book also.
To make this an original Evelyn cake you need to either not cook the filling to firm or try to spread it between the layers while the filling is still warm, (this makes the top layer of cake start to slide). Now you need to try to hold the layers together with toothpicks. Now make the frosting and frost the top and sides of the cake, since the filling has come out between the layers the frosting will swirl in this area. The results: A decedent chocolate cake that is a little lopsided and bursting with toothpicks.
