shredded hash browns (I used a peg of Simply Potatoes hash brown's or about 2 cups)
8 eggs
1 cup cheese
1/2 - 1 cup broccoli (or your favorite veggie)
1/2 cup milk
1/2 cup diced ham or crumbled bacon

Directions:
Directions:
Preheat oven to 450 degrees.
Use cooking spray or butter to grease bottom of an 11 x 13 inch casserole dish. Press hash browns into bottom. Bake at 450 until crisp and browned, 15-20 minutes.
Beat eggs. Stir in rest of cheese, veggies, milk, and meat. Add salt and pepper to taste. Pour over your hash browns. Reduce heat to 350. Bake for 25-30 minutes or until cooked through.
Inserted knife should come out clean.
