1/4 cup olive oil
1/8 cup lemon juice
1 tbl. dried parley (or you can use fresh)
2 tsps. dried oregano
2 cloves garlic, minced
1 tsp grated lemon peel
salt & pepper to taste
1/4 tsp crushed red pepper
1 bag uncooked shrimp, deveined
couple tablespoons dried breadcrumbs

1. In a medium bowl, whisk ingredients (except for shrimp and breadcrumbs)
2. Place the shrimp in a zip-lock bag (or plastic container with lid) and pour in marinade. Toss to coat well and refrigerate for at least 1 hour.
3. Remove shrimp from bag and discard marinade. Thread shrimp on metal skewers (you can use wooden skewers, but make sure they are pre-soaked) - 5 to a skewer.
4. Sprinkle breadcrumbs over the shrimp.
5. Grill over medium heat with the lid closed as much as possible for about 3 minutes a side - or until shrimp is opaque and firm to the touch
