2 cups grated carrots
1-1/2 cups vegetable oil
3 eggs
1 cup chopped nuts
1-1/2 cup flaked coconut
1(8oz) can crushed pineapple, undrained
2 tsp vanilla
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/4 tsp cloves
2 tsp baking soda
1/2 tsp baking powder
1 cup sugar
1 cup brown sugar, packed
2 cups flour

Directions:
Directions:
In a large mixing bowl combine, carrots, oil, eggs and stir till blended. Stir in nuts, coconut and pineapple as well as vanilla. Stir in spices, soda, powder, and sugars until well blended. fold in flour just until blended.

Pour into ungreased 13x9x2 inch baking dish and bake at 350º
for 50-60 min. or until knife stuck into center of cake comes out clean
