1 pkg. dry yeast
1 tbsp warm water
2 tbsp butter
2 tbsp sugar
1 tsp salt
1/2 cup scolded milk
1 egg
2-1/2 cups sifted flour
3 cups apples sliced
1 cup sugar
3 tbsp butter
1-1/2 tsp cinnamon
1 egg yolk (or 1 egg)
1/3 cup light cream

Soften yeast in warm water. In large bowl combine nest 4 ingredients, cool to luke warm. Stir in unbeaten egg and the softened yeast. Add gradually the flour, beating well. Cover and let rise until doubled 45-60 min. spread in well greased 13z9z2 inch pan arrange apples in rows on dough

Combine sugar, butter and cinnamon. Mix well. Reserve 2 tbsp. Sprinkle remained over apple-topped dough. Cover. Let rise in warm place until light. (30 min.)
Bake in 375º oven for 20-25 minutes. Blend egg yolk and cream. Pour over coffee cake. Bake 15 minutes. Sprinkle with remaining cinnamon-sugar mixture. Serve warm.
