6 medium potatoes (2 pounds)

½ cup light mayonnaise or salad dressing

1 medium apple, coarsely shredded

2 tablespoon snipped fresh cilantro

½ teaspoon dry mustard

¼ teaspoon salt

¼ teaspoon ground cumin

dash ground red pepper

1 cup chopped carrots

1 cup chopped celery

2 hard cooked eggs, coarsely chopped

1 medium tomato, chopped

Directions:
Directions:
Wash potatoes. Cook, covered, in a small amount of lightly salted boiling water for 20 to 25 minutes, or just until tender. Drain well. Cool. Peel and cube the potatoes.

Meanwhile, for dressing, in a large mixing bowl combine the mayonnaise, apple, cilantro, dry mustard, salt, cumin and red pepper. Stir in carrots, celer and eggs. Gently stir in the potatoes. Cover and chill for 6 to 24 hours.

If a mixture appears dry after chilling, stir in a little milk to moisten. Before serving, sprinkle with tomato.
