5 FRESH MEDIUM BEETS (about 1 1/4 pounds)
2 TABLESPOONS BUTTER
2 TEASPOONS FLOUR
2 TABLESPOONS VINEGAR
1 TABLESPOON SUGAR
1/4 TEASPOON SALT
1/4 TEASPOON DRIED DILL WEED
1/4 TEASPOON PEPPER
1/2 CUP DAIRY SOUR CREAM
3 TABLESPOONS HALF-AND-HALF

Directions:
Prepare and cook beets as directed below; cut into shoestring pieces.

Heat butter in 2-quart saucepan until melted. Blend in flour. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat; stir in vinegar, sugar,salt, dill weed and pepper. Heat to boiling, stirring constantly. Boil and stir 1 minute Stir in beets; heat through. Mix sour cream and half-and half; heat through over low heat. Pour over hot beets.
4 SERVINGS

TO PREPARE BEETS: Cut off all but 2 inches of beet tops. Wash beets and leave whole, with root ends attached.

TO COOK BEETS: Heat 6 cups water, I Tablespoon vinegar (to preserve color) and 1 teaspoon salt to boiling. Add beets. Cover and heat to boiling. Cook until tender, 35 to 45 minutes; drain. Run cold water over beets; slip of skins and remove root ends. Slice, dice or cut into shoestring pieces.
