3 pound ground chuck
1 pound ground pork
1 onion, chopped (about 1/2 cup)
4 clove garlic, minced
45 ounce can tomato sauce (3 - 15oz cans - I use lowest carb content)
1 c. chicken stock (used to swirl around in empty sauce cans to get every last drop)
1/2 c. granular Splenda
1/4 c. vinegar
1 tsp. prepared yellow mustard
1/4 c. Worcestershire sauce
3 tsp. salt
1-2 tsp. xanthan gum, optional (thickener)

Brown the ground chuck along with the onion and garlic; drain the fat. Add the remaining ingredients, except the xanthan gum. Cover and simmer 90 minutes (if you don’t have that much time, cut one of the cans of tomato sauce and simmer for 30 minutes). If the sauce is too thin, thicken it with a little xanthan gum. Serve on low carb buns or over chopped lettuce.

xanthum gum is a good thickener and adds very little to the carb count unlike flour or corn starch.
