Ingredients: 2-3 lbs frozen chicken wings, already divided into drummies and winglets (do not defrost) Garlic powder Chile powder Salt and Pepper (optional)
Sauce: 1 bottle Frank's Red Hot© (plain, NOT buffalo style) 1 TBSP grassfed ghee (clarified butter)
Coconut Milk Ranch: (This was originally from GrassFed Girl© - www.grassfedgirl.com) 2 cups full fat canned coconut milk (Personally I like Thai Kitchen©, it's organic and it goes on sale every so often) 1 tsp salt 1/2 tsp ground black pepper 1 tbsp onion powder 1 tsp garlic powder 1 tbsp dried parsely 1/4 celery salt 1/2 tsp dried dill 1 tbsp mustard (I like to use spicy brown or dijon myself, but plain is okay too) 1 tsp paprika

Directions:For wings - Preheat oven to 425º.
Line 2 9x13 pans with foil. Spray foil with cooking spray or use Misto with EVOO.
Place frozen chicken wings in baking pans, making sure to space them out enough that they won't be touching. Sprinkle generously with garlic powder and chile powder. Optional - add a little salt and pepper to taste.
Bake wings uncovered for 30 min. Pull wings out, flip over to unseasoned side and sprinkle generously again with garlic and chile powders and S&P, if using.
Bake wings again for another 30-35 minutes or until cooked through.
Meanwhile in a medium sauce pan combine Frank's Red Hot© and ghee until melted and a little bubbly. Set aside.
(You can also use other sauces if you don't want hot. I've used Rising Hy© Honey Mustard, BBQ, etc. Go wild. Caution - Tabasco© Buffalo Sauce is Whole30© Approved but it is REALLY spicy on wings)
Back to the wings...
Once the wings are done, pull out and let rest on the stove for about 5-10 minutes. Set the oven to BROIL.
Toss the wings in the sauce you've prepared. Put back in the oven for about 5 minutes to broil and get crispy just like fried wings. Make sure to watch them and flip halfway through so they don't burn!!
Serve with Coconut Milk Ranch (recipe follows), celery and carrots and maybe even sweet potato fries.

I like to use my immersion blender in the cup it came with because then the dressing stores easily with the lid and it's only one dish to wash! The dressing lasts about 1 1/2 to 2 weeks... if you don't eat it all right away that is! |
