Ingredients: 1 Chicken Cut into pieces 3 pork chops cut into pieces ½ pound medium shrimp 1 onion, sliced 1 tomato, chopped ½ cup peas 1 small jar pimientos 2 cups rice (Saffron or Bijol) 5 cups chicken stocks olive oil and salt

Directions:Brown the chicken and the pork in a large pan in olive oil. Add to the chicken and the pork the onions, tomatoes and squid. Stir while frying until the onion becomes translucent, then add the rice. There should be sufficient oil to coat the rice, so it may be necessary to add a little more. After stirring and frying a few minutes, this is the point at which everything is transferred to the large pan. Then, pour in the stock and cook. Wen the rice is almost done, it will be finished in the oven. Stir in the peas. Decorate with the shrimp and pimientos. Sprinkle with olive oil. It will take only five to ten minutes in a 350 degree oven. Serve with wedges of lemon for each person to squeeze on his Paella. |

Originally from Spain, Paella is the start of a Sunday meal where the entire family goes out for the day. Paella is often cooked over an open fire, especially at the beach. Enjoy!
