1 stick butter, room temp.
1 c. sugar
4 extra large eggs, room temp
16oz can chocolate syrup (Hersheys)
1 tbsp. vanilla extract
1 c. all purpose flour

Ganache:
1/2 c. heavy cream
8 oz. semisweet chocolate chips
1 tsp. instant coffe granules

Directions:
Directions:
Cream the butter and sugar until light and fluffy. Add the eggs, 1 at a time. Mix in the chocolate syrup and vanilla. Add the flour and mix until just combined. Don't overbeat.
Pour batter into paper lined cupcake pan (12 cupcakes). Fill to top as they will not rise.
Bake at 325º for 30 minutes or just until set in the middle. Cool completely in pan.

Cook the cream, chocolate and instant coffee on low heat, stirring constantly until chocolate is melted and mixture is warm. Spoon over each cupcake. The cupcakes can be frozen before adding ganache, but once you add the ganache, don't refrigerate.
