1/2 cup salt
fish
vinegar

sliced onions

Brine:
1 1/2 quart vinegar
1/2 quart white wine
1 box pickling spice (1 1/4 oz)
1 quart sugar

Directions:
Directions:
Cut fish up into small pieces. Add 1/2 cup salt to quart of fish. Cover to top with vinegar an soak for 5 days. Wash thoroughly and soak in cold water for 2 hours, changing the water several times. Slice some onions.

Mix ingredients for brine together, bring to boil, cool. The brine makes enough for 1 gallon of fish.

Pack fish and onions in jars and cover with brine. Keep in refrigerator.

Not sure if the 1 qrt of sugar is right for the brine, seems like a lot, may need to adjust
