3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
2 c. zucchini
1/2 c dates (optional nuts and raisins, too)
3 c. flour
1 tsp. salt
3 tsp. cinnamon
1 tsp. soda
1/4 tsp. baking powder

Directions:
Directions:
Peel and grate zucchini, seeds and all, it will be mushy. Can be done in a blender real fast. Beat eggs until foamy, add oil, sugar, vanilla, mix well. Add zucchini, mix well. Sift all dry ingredients together, mix well. Add dates, nuts, etc. if desired. Turn into 2 well greased loaf or bread pans. Bake at 325º for 60-75 minutes. Test after 60 minutes. Smaller pans usually bake for 45 minutes. Turn out on wire rack to cool.
