1 box Spanish Rice Mix
30 or more frozen shrimp, thawed
1/4 cup chopped onion
1/4 cup chopped celery
2 tbsp olive oil
1 tsp cajun seasoning

Directions:
Directions:
Saute spanish rice in oil in skillet with onion, celery, bell pepper, and shrimp until golden brown. Add 2 1/3 cup hot water and stir in seasoning pack from rice and Cajun seasoning. Bring to a boil, cover and simmer for 20 minutes.

Sometimes instead of onion, celery, and peppers, we use a drained can of corn. This is a nice variation to the recipe.
