-1 package Mccormick Seasoning Mix
-1 tbsp oil
-1 lb. boneless skinless chicken breasts, cut into 1/2-inch cubes
-1 cup water
-1 can (15 to16 oz.) while beans, undrained
-1/2 cup chopped bell pepper
-1 can (15 to16 oz.) black beans, drained and rinsed
-1 can (14 1/2 oz.) diced tomatoes, drained
-1 can (8 3/4 oz.) whole kernel corn, drained

-Heat oil in large skillet on medium heat. Add chicken; cook and stir 3-5 minutes or until no longer pink.

-Stir in Seasoning Mix, water and beans. Bring to boil. Cover. Reduce heat and simmer 10 minutes or until chicken is cooked through, stirring occasionally.

To do the South of the Border Chicken Chili:

Add 1/2 cup chopped bell pepper when cooking the chicken. Stir in 1 can (15 to 16 oz.) black beans, drained and rinsed, 1 can (14 1/2 oz.) diced tomatoes, drained, and 1 can (8 3/4 oz.) whole kernel corn, drained, with the white beans. Continue as directed.
