1 Pack of Costco Boneless Skinless Chicken Thighs
¼ Cup Olive Oil
1 teaspoon Salt
½ teaspoon Ground Black Pepper
1 large shallot, chopped
4 toes garlic, chopped
1 26 oz. jar Trader Joe’s Tomato Basil Marinara Sauce
2 Tablespoons Kirkland Italian Seasoning Blend
1 Box of Barilla Rigatoni Pasta

Directions:

Cut chicken meat into 2” cubes, wash and put in single layer on paper towels to dry.
Season chicken with salt and pepper and then saute in the olive oil in batches. Do not cook all the way through, just toast the chicken lightly. Remove each batch to a plate to keep warm until all the chicken is toasted.
Pour off all but 2 Tablespoons of the oil and then add the shallot and garlic. Saute for 4 to 5 minutes until shallot is clear. Add the jar of sauce and the chicken back to the pot. Add the Italian Seasoning and stir well.
Bring to a boil and reduce heat to lowest setting possible cover and simmer for 40 minutes.
Cook the pasta according to package directions. When pasta is el dente use a slotted to remove it from the water and add it to the sauce. Stir till the sauce coats the pasta and serve immediately with grated parmesan cheese.
