8 cups kale, rinsed, stems discarded
1 Tbsp. olive oil or coconut oil
1/2 cup chopped scallion or sweet onion
3/4 cup low sodium chicken stock (or vegetable stock)
1/2 Tbsp. Dijon mustard
2 tsp. honey
1/2 Tbsp. apple cider vinegar

Directions:
Directions:
Tear the kale into bite-size pieces. In a skillet, heat 1 Tbsp. oil & saute the onion.
Add the stock, mustard, honey, & vinegar. Stir until the kale is well coated & warm.
