2 Tbsp. olive oil, divided
2 or 3 chicken breast fillets, cut into 1-inch cubes
1 carrot, sliced diagonally into 1/4-inch slices
1 head fresh broccoli, cut into florets
2 cloves garlic, minced
2/3 cup chicken broth
1 tsp. dried basil
1/4 cup dry grated Parmesan cheese
8 oz. pkg. whole wheat angel hair pasta

In a skillet, cook the chicken in 1 Tbsp. hot oil. Remove chicken from skillet & place it on paper towels to drain. Set aside.
Bring a pot of water to a boil to cook the pasta. While it's heating, heat 1 Tbsp. olive oil in the skillet you were using to cook chicken. Add the carrots; cook them for 4 minutes. Add broccoli & garlic; cook 2 minutes, stirring continually. Put the pasta into the boiling water. Next, add the broth, basil, & Parmesan cheese to the skillet, stirring to combine. Add the chicken; reduce the heat & simmer 4 minutes. Check to see if the pasta is done. When it has finished cooking, drain the pasta. Place the pasta in a large bowl; top with vegetable mixture & serve.
