1 1/2 c. flour
3/4 c. brown sugar
1/2 t. soda
1/2 t. salt
1/3 c. vegetable oil
1 egg, slightly beaten
1/2 c. buttermilk
1 t. vanilla
1 c. rhubarb, diced (fresh or frozen)
1/2 c. walnuts, chopped

Topping:
1/4 c. brown sugar
1/2 t. cinnamon
1/4 c. nuts, chopped

Directions:
Directions:
Combine flour, baking soda, salt and brown sugar. Combine oil, egg, buttermilk and vanilla; stir together just until moistened. Fold in rhubarb and nuts. Fill muffin tins 2/3 full. Bake at 375* for 20 - 25 minutes. Cool for 10 minutes before removing to wire rack. 10 muffins
