1 1/4 c. cornmeal
1 c. flour
1/3 c. brown sugar
1/3 c. sugar
pinch of salt
1 t. baking soda
1 egg
1 c. buttermilk
3/4 c. vegetable oil

Directions:
Directions:
Combine dry ingredients. In another bowl, combine beaten egg, buttermilk and oil. Stir into dry ingredients just until moistened. Fill greased muffin tins 3/4 full. Bake at 425* for 12 - 15 minutes. Cool for 10 minutes before removing to wire rack. 1 dozen
