1 1/2 c. flour
1 c. sugar
3/4 t. salt
1/2 t. baking soda
2 eggs
1/4 c. vegetable oil
1/2 t. vanilla
1/8 t. almond extract
1 1/4 c. peaches, chopped
1/2 c. almonds, chopped

Directions:
Directions:
In a large bowl, combine flour, sugar, salt and baking soda. In another bowl, beat eggs, oil and extracts; stir into dry ingredients just until moistened. Fold in peaches and almonds. Fill greased muffin tin 2/3 full. Bake at 375* for 20 - 25 minutes or till done. Cool in pan for 10 minutes before removing to a wire rack. 10 -12 muffins
