3 pounds chicken thighs, skin removed, bone-in
14 oz can diced tomatoes
1 teaspoon italian seasoning
6 oz can tomato paste
1 cup chicken broth
1 onion sliced
4 cloves garlic minced
1 green pepper chopped
1 cup sliced mushrooms
1/2 cup red wine
salt and pepper to taste
2 tablespoons cornstarch
3 tablespoons water

Directions:
Directions:
Place all ingredients except last 2 in slow cooker. Cook on low 6-8 hours until chicken is tender.

Towards the end of cooking time, combine starch and water together, then stir into chicken.
Some like to serve over mashed potatoes, I prefer cholesterol-free egg noodles.
