Ingredients: 1 whole fryer chicken cut in pieces as for frying 1 T Salt 2 t ground black pepper 1 large yellow onion chopped 6 cloves garlic finely minced 3 stalks celery chopped 1 jar Barilla Tomato Basil Sauce 8 large green olives stuffed with garlic cloves 8 canned artichoke quarters (in water, not vinegar) 3 T capers 1 roasted red pepper from jar (chopped) 1/4 head of green cabbage chopped Olive Oil

Directions:Pour olive oil in a cold 5 qt enameled cast iron dutch oven to a depth of 1 1/2 inches. Heat to 350º
Season the chicken pieces with salt and pepper. Fry the chicken in batches so as to not crowd the pan until they are crispy and well browned. After all the chicken is fried, pour off and discard all but about 3 T of the oil.
Add the onions, garlic and sauté till the onions are clear.
Add the rest of the ingredients and bring to a boil. Add the chicken pieces and be sure they are covered in the sauce. Bring back to a boil and reduce the heat to low.
Simmer for one hour.
Serve over rice or pasta. |

Notes: This is one of those clean out the refrigerator recipes. It was a rainy day and I did not want to go to the store, so I looked in the fridge and pantry and came up with this combination of stuff that was on hand. Turned out yummy, so I had to recreate it measuring this time so I could record it and other could enjoy making it.
