2 lbs. chicken, cut into bit-size pieces
1 Tbsp. canola oil
1 cup small chopped onion
1 Tbsp. finely minced garlic
1 cup diced celery
1 cup diced green pepper
2 cups thinly sliced mushrooms
2 Tbsp. finely chopped parsley
fresh ground pepper, to taste
14 1/2 oz. can unsalted tomatoes, chopped

Directions:
Directions:
Brown the chicken in a lightly oiled skillet. Remove chicken to a bowl. Add a little oil & saute the onion, green pepper, garlic, celery, & garlic. Add the mushrooms, parsley, pepper, & tomatoes. Simmer 5 minutes. Add the chicken & simmer slowly for 1 hour., stirring occasionally.
