3 slices bacon, chopped
1 Tbsp. extra virgin olive oil
1 shallot, chopped
1 1/2 lbs. Brussels Sprouts, trimmed, large sprouts cut in half & small ones left whole
1 cup chicken broth
salt & pepper

Directions:
In a skillet, brown the bacon over medium high heat. Place bacon on paper towels to drain. When cooled, crumble the bacon; set aside. Spread the olive oil around the skillet. Add the shallots & saute for 1 to 2 minutes. Add the Brussels Sprouts, turning to coat with oil. Salt & pepper to taste. Cook the Brussels Sprouts for 2 to 3 minutes until they begin to soften, then add the broth to the skillet. Bring the broth to a simmer, then cover the pan, reduce the heat to medium low, & cook the sprouts for 10 minutes until tender. Serve the cooked sprouts topped with the crumbled cooked bacon.
