5 lbs red potatoes
6 hard boiled eggs
1 lb bacon cooked crisp and crumbled
1 c diced celery
1 c diced onions
1/4 c chopped parsley
1/2 c chopped shallots (green onions)
1 2/3 c Blue Plate Mayonnaise
2 T yellow mustard
1 T white vinegar
2 T olive oil
1 t garlic powder
1 t ground black pepper
2 t salt

Directions:
Directions:
Boil potatoes in a 5 qt dutch oven pot with skins on. Cook till a knife inserted into the potato indicates it is soft and fully cooked. Drain off the hot water and cover with cold tap water and allow the potatoes to fully cool down before peeling. Cut the peeled potatoes into 1/2" cubes and place in a large bowl.
Peel and chop the hard boiled eggs, not to finely and add them to the potatoes stirring gently to combine the two.
Add the diced celery, onions and shallots to the potato mixture and gently stir to blend all together.
In a separate bowl blend the mayonnaise, mustard, vinegar parsley, garlic powder, salt and pepper together to make a dressing. Add the crumbled bacon to the dressing and stir.
Pour the dressing over the potato mixture and blend together thoroughly using your hands. Yes, your hands, God's spoons! It is really the only way to get this mixture completely blended.
Serve now or refrigerate over night and serve cold.

We always had this with Baked Ham, Candied Sweet Potatoes and Petit Pois Peas. This menu was mostly served in spring and early summer.
This savory potato salad is also good to serve with gumbo, if you prefer potatoes to rice in gumbo.
