2 avocados
1/2 roma tomato, diced
1/4 sweet onion, chopped
1/2 bunch of cilantro, chopped
1 small lime, juiced
salt and pepper to taste

1. Cut the avocados in half. Remove seed. Scoop out avocado from the peel, put in a mixing bowl. (I find it easiest to score the inside of the avocado with a blunt knife and scoop out the flesh with a spoon.)

2. Using a fork, roughly mash the avocado. (Don't overdo it! The guacamole should be a little chunky.)

3. Add the chopped onion, cilantro, lime, and tomato and folding gently all of the ingredients.

4. Add salt and pepper to taste. (I usually add about 1 tsp. of salt.)

Because guacamole will brown quickly, it is best made 30 to 45 minutes before serving.
