1 c 250 mL Margarine
1 c 250 mL Brown Sugar
1 Egg
1 tsp 5 mL Baking Soda
2 tsp 10 mL Hot water
1/2 tsp 2.5 mL Vanilla

1 c 250 mL All purpose Flour
3 c 750 mL Oatmeal

Directions:

1. Preheat oven to 350* F
2. Lightly grease 2 cookie sheets
3, Using mixer, cream margarine until soft. Add Brown sugar and cream.
4. Add egg and mix in, scraping sides of bowl.
5. Dissolve soda in water, and add to sugar mixture with vanilla. Scrape sides of bowl again.
6. Reduce mixer speed and add flour. Add oatmeal, about 1/2 cup at a time, and mix together.
7. After the first cup or so, the dough might need to be mixed by hand.
8. Drop teaspoons of dough onto cookie sheet, and press flat with a fork
9. Bake 10-12 minutes.
10. When cookies are done, transfer to cooling rack
