8 oz chicken breast cubed (1 inch)
1 lemon juiced
2 cloves of garlic chopped
1 C extra virgin olive oil
1/2 C of dry white wine
dash of salt
3/4 cup breadcrumbs (plain)
3/4 cup parmigiano cheese grated
Mushrooms and zucchini cubes optional

Amogio Sauce (for dipping Spiedini or bread)
1 C extra virgin olive oil
1/2 C lemon juice
1/2 tsp Kosher salt
1/2 tsp black pepper
1 TBS finely chopped garlic
1 TBS dried parsley
1 TBS dried basil
1/2 tsp red pepper flakes

Directions:
Directions:
Marinate cubes of chicken in baggie with lemon juice, garlic, olive oil, wine and salt. Marinate overnight or for at least 5-8 hours. Thread chicken onto skewer (with mushrooms and zucchini cubes optional). Mix the breadcrumbs and chesse. Roll the skewers in the dry mix. Cook on grill or in oven at 475 degrees for 15-20 minutes.

Sauce:
Mix all ingredients in a medium sauce pan over medium heat. Bring to a boil and simmer on low for 3-5 minutes. Serve immediately.
