Crepes:
1 c. cold water
1 c. cold milk
4 eggs
1/2 tsp. salt
2 c. flour
2 tbsp. melted butter
Filling:
4 tbsp. chopped green onion
4 tbsp. better
1/2 c. sherry
3 c. diced chicken or crab
salt and pepper to taste
Sauce:
4 tbsp. butter
5 tbsp. flour
2 c. hot milk
3/4 Swiss chesse, grated
salt and pepper
2 egg yolks
1/2 c. heavy cream

Crepes:
Put all ingredients in blender jar, cover and blend 2 minutes. Refrigerate 1-2 hours. Using stove top or electric crepe pan, make crepes as thin as possible. Stack, when cool, between wax paper and store in friedge in plastic bag or freeze until ready to use.
Filling:
Saute onion in butter-add sherry and mix with chicken or crab. Set aside for sauce
Sauce:
Melt butter, add flour and blend. Add milk, seasoning, boil for 1 minute and remove from heat. Beat yolks and cream. Add yolks, stirring constantly. Fold in cheese, should be THICK. Add sauce to filling. Reserve enough sauce to pour over crepes. If too thick you may thin this out with cream. Put approx. 1-2 tbsp. filling on crepe, roll up and place in casserole dish seam side down. Cotinue until all filling is used. Cover with remainder of sauce. Heat through in moderate oven and serve immediately.

Great for a special dinner served with large tossed green salad and buns.

Crepes can be made into dessert crepes by using fresh or canned fruit as the filling. Cover with whipping cream, sprinkle with semi-sweet chocolate bits-DELICIOUS! If serving these for a special Sunday or Christmas brunch, serve with sausages and coffee.
