8 slices bacon cut in strips crosswise
1 large onion thinly sliced
1/4 -1/2 c. dry white wine
3 eggs lightly beaten
2/3 c. freshly grated Parmesan cheese
2 Tbsp. chopped parsely
1/2 tsp. salt
Pepper to taste
1 lb. pasta, angel hair, spaghetti, linguine etc.
Freshly grated Parmesan cheese on the side

Directions:

In a medium skillet cook bacon until desired crispness, add onion and cook till tender.
Pour off all but 1/4 cup fat.
Add wine, cover and simmer 15-20 min.
In a bowl combine eggs,2/3 cup Parmesan, parsley, salt and pepper.
Cook the pasta al dente.
Toss the pasta with egg mixture, then bacon mixture.
Serve immediately.
Add liquid (chicken broth or milk if necessary).
