1 fresh pie pumpkin
1 1/3 cups sweetened condensed milk
1 egg
1 1/4 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
1/4 tsp. ground cloves
1 cup hot water
9-inch unbaked pie crust

Remove stem, then cut pumpkin in half; scoop out strings & seeds. Place cut-side down on foil-lined baking sheets. Cover with foil; bake at 350º until tender, about 1 1/2 hours. Cool. Scoop out flesh & mash, or blend in food processor until smooth. Drain if too watery. (Mashed pumpkin will keep in refrigerator for 5 days.)
For pie filling, combine: 1 1/3 cups smooth pumpkin puree, sweetened condensed milk, egg, spices, & hot water. Pour into pie crust. Bake at 375º for 55 to 65 minutes. ( The center will move slightly.) Cool & serve.
