2 oz salt pork
1 small diced onion
1/2 cup butter
1/4 cup flour
2 ribs of celery, minced
(5) 6 oz cans of chopped/minced clams including the juice
(2) 8 oz jars clam juice
1 lb diced potatoes
2 cups warmed half and half
salt, pepper, tabasco sauce, worcestershire sauce to taste

Directions:
Directions:
Bring potatoes and clam juice to a boil. Cook until potatoes are done.

Add clams, set aside

Skin and dice the salt pork and sauté in a small fry pan until rendered (until the pork is crispy)

Add diced onion, sauté until the onion is "glassy"

Add butter, melt and cook slightly

Add flour, stir until you have a thickened paste

Bring clams, juice and potatoes back to a boil and add the roux from the fry pan

Thicken and bring to a rolling boil

Add previously warmed half and half to desired consistency

Add salt, pepper, Tabasco and Worcestershire to taste
