Ingredients:
Ingredients:
2 eggs beaten
1 cup crushed butter crackers (I use 1/2 ritz & 1/2 onion crackers)
1/2 tsp garlic salt
ground pepper to taste
4 skinless, boneless chicken breasts
3/4 cup butter

Directions:
Directions:
Beat eggs and leave in a large bowl. Crush crackers in a bag and place in another large bowl. Add garlic salt and salt and pepper to the crumbs.

Fillet chicken breast part way and open up to butterfly them. Dip them into the egg and then dredge in the crumb mixture to coat.

Melt the butter in a 9x13 baking dish in the oven and then add the chicken breasts. Cook at 350 degrees for 10 min and then flip over for another 10 min.

Best to make the breasts with crumbs and let sit for about 1/2 an hour before baking.
