1/2 cup flour
1/2 cup oil, shortening, or bacon grease
1 can chicken broth
water
1 can stewed tomatoes
1 can tomato sauce
1 or 2 pkg. frozen onion/pepper seasonings
1/2 pkg. frozen sliced okra
Creole seasoning
Louisiana hot sauce
shrimp, crab meat, oysters, etc. and/or chicken-shredded
1-2 tbsp. gumbo file
cooked rice

Mix a roux of flour and oil. Cook a long time on low until roux is dark brown. Add chicken broth and water to desired level. Add tomatoes, tomato sauce, frozen onion seasoning, okra. Add whatever seafood you want (or chicken) and simmer until done. Taste and season with Creole seasoning and hot sauce. After heat is turned off, add gumbo file (stir while adding). Let sit for flavors to mingle. Put cooked rice in bowl and ladle gumbo over it. Don't mix rice into gumbo pot.
