1 1/2 tsp. salt
1 tsp. ground coriander
1/2 tsp. paprika
1/4 tsp. cayenne pepper
4 (6 oz) tuna steaks - sushi grade (about 1 1/2" thick)
4 tbs. coarsley ground black pepper
2 tbs. vegetable oil
soy sauce
wasabi
1 lemon, quartered

Directions:
Directions:
1. In a small bowl, combine coriander, salt, paprika, and cayenne pepper.
2. Press the tuna into the mixture then press into the black pepper..
3. Coat both sides of the tuna.
4. Heat skillet until very hot. Add the oil and seer the tuna steaks for about 2 minutes each side, or until desired doneness is reached.
5. Slice thinly and serve with soy sauce and wasabi or fresh lemon.
