1/2 lb. sweet Italian sausage
1 medium onion, chopped
1 28 oz. can Hunt's Tomato Sauce
1 box frozen chopped spinach
1 32 oz. box of beef broth
1 c. cooked white rice
salt and pepper to taste
shredded mozzarella cheese

Directions:
Directions:
In a large pasta pot, saute chopped onion until soft. Take the sausage out of the casing, and brown it with the onion, breaking it up into small pieces. Be sure to cook the sausage thoroughly.

Add the tomato sauce, spinach, and about 1/2 of the broth. Simmer until the spinach thaws. Add the cooked white rice, and decide if you want more broth to thin the soup. Add salt and pepper if desired.

Sprinkle with mozzarella cheese and serve!

This recipe was given to me by the chef at Lui Liu's in West Lebanon NH, one of our favorite places to eat. They always gave kids pizza dough to play with while waiting for dinner - perfect!
