1/3 cup pitted prunes or raisins (2 oz.)

½ cup sugar

½ cup packed brown sugar

1 T. nonfat milk

1 t. vanilla

1 cup flour

½ t. baking soda

½ t. baking powder

½ t. salt

1 cup rolled oats

Coat baking sheets with cooking spray. Combine fruit and 1 ½ T. water in blender or mini processor to

chop. In large bowl, beat together sugars, fruit, ¼ cup water, milk and vanilla. In small bowl mix flour,

baking soda, baking powder and salt. Stir into fruit mixture. Stir in oats. Drop by generous teaspoonfuls

onto baking sheets, leaving plenty of room between cookies. Bake at 350-360 degrees for 12 minutes.

Remove to racks; let cool completely. Store in airtight container up to 2 weeks.
