50 Medium Size Grape Leaves
2 Medium Onions Grated
8 Green Onions Finely Chopped
1 Batch Fresh Parsley Finely chopped
1/2 Green Mint Finely Chopped
2 Cups of Rice
2 Tomatoes Grated
2 Large Tomatoes Sliced
Salt, Pepper and Oregano to Taste
3 Tbsp Olive Oil
1/4 Cup Olive
1-2 Lemons Juiced

Directions:
If you use fresh grape leaves you will need to parboil them 2-3 minutes. Place them in a strainer to cool. If however you use the jar ones just rinse each grape leaf under running water and then place them in the strainer to strain. In a bowl combine onions, parsley, mint, 2 graded tomatoes, rice, salt, pepper, oregano and 3 Tbsp olive oil. Mix well. In a large pot place one layer of grape leaves. Take one leaf at a time with vain side up and place half a teaspoon of the mix in the center and fold them - forming an oblong shape (do not squeeze while folding) - place in pot forming 2-3 rows. Repeat this process until you complete rolling all the grape leaves. Cover the top with the sliced tomatoes and the leaves. Add a pinch of salt and pepper and 1/4 cup olive oil. Add warm water to cover the pot half way. Take a heat proof dish and place face down on the top to weigh down the dolmathes. Place on stove top - low flame until the rice is cooked. If the rice is not done add a little warm water until cooked. They can be served warm or cold.
