10 to 12 beef tamales
1 medium onion, chopped small
1 small bell pepper, chopped small
1 small jar pimentos, drained
1 Tbsp. butter
2 cups fresh corn kernels (frozen okay, if thawed)
1 1/2 cups shredded (or grated) Cheddar cheese
salt & pepper

Directions:
Directions:
If using fresh tamales, steam & reserve the cooking liquid. If using canned tamales, drain & reserve the liquid. Remove husks from the tamales & cut them into bite-size pieces; set aside. Lightly saute the onion, bell pepper, & pimento in butter. Add about 1/4 cup tamale liquid & simmer for a few minutes. Gently toss all ingredients together, except the cheese. Add more tamale liquid, if needed. Pour mixture into a lightly greased 1 1/2 qt. casserole dish. Bake at 350º for one hour, or until thickened. Top with Cheddar cheese, return to oven, & bake until cheese melts.
